Gyeran Mari is a humble but beloved Korean side dish — a rolled omelette that’s light, savory, and just a little bit sweet. It shows up in lunchboxes, breakfast tables, and banchan spreads across Korea. While it's simple, the layers of egg and vegetables are satisfying and surprisingly elegant. Covered in ketchup and paired with a bowl of steaming Kimchi Jjigae, it’s comfort food at its quiet best.

Ingredients:
5 large eggs
2 tablespoon finely chopped carrot
1 tablespoon finely chopped scallion
1 pinch salt
Optional: chopped ham, imitation crab, shredded cheese, sesame oil
Neutral oil for cooking (e.g., canola or avocado)
Instructions:
Crack eggs into a bowl and beat with salt until fully combined.
Stir in carrots and scallions. If using, add optional ingredients.
Lightly oil a nonstick or cast-iron pan and heat over medium-low.
Pour a thin layer of the egg mixture into the pan and let it set.
When the bottom is cooked but the top is still slightly wet, begin rolling gently from one side using a spatula or chopsticks. (video here)
Push the rolled portion to one side of the pan, oil the exposed part, and pour more egg to continue the roll.
Repeat until all the mixture is used.
Let it rest for 1–2 minutes, then slice into rounds.
